Crunchy French Toast Stix

Yogurt Dip for dunking this yummy finger food.
Ingredients
4 slices of whole-wheat or oatmeal bread
2 eggs
1/4 cup low-fat milk
1/4 teaspoon vanilla
Dash of cinnamon
2 cups of cornflakes
(or 3/4 cups prepared cornflake crumbs)
Non-stick cooking spray
Directions
1. Wash hands.
2. Cut each slice of bread into three strips.
3. Beat the eggs with the milk, milk, vanilla and cinnamon until they are
foamy.
4. Place the cereal in a zipper-lock bag. Crush it with a rolling pin, and
pour onto a dinner-size plate or shallow dish.
5. Dip each bread strip in the egg mixture, then in the crushed cereal.
6. Cook strips over medium heat in a skillet coated with non-stick cooking
spray until golden brown – about 3-4 minutes each side.
