Four-Fruit Compote with
Vanilla Yogurt and Granola

Perfect for classroom celebrations or parties at home, this is a nutritious alternative to traditional sweet desserts. These are suggested quantities of fruit. You can adjust them, depending on children's preferences.

1 can (20 oz) pineapple chunks
1/3 cup sugar
2 tablespoons cornstarch
1/3 cup orange juice
1 tablespoon lemon juice
1 can (11oz) mandarin oranges, drained
3 to 4 apples, unpeeled, chopped
2 medium bananas, sliced
2 containers (8 ounces) low-fat vanilla yogurt
3/4 cup low-fat granola

1. Drain pineapple, reserving 3/4 cup juice.
2. In a saucepan, combine sugar and cornstarch. Add pineapple juice, orange juice and lemon juice. Cook and stir over medium heat until thickened and bubbly. Cook and stir for another minute.
3. Remove from the heat; set aside.
4. In a large bowl, combine pineapple chunks, oranges, apples and bananas. Pour warm sauce over the fruit; stir gently to coat. Cover and refrigerate.
5. Line a colander with paper towels and place over bowl to catch drips. Pour yogurt into colander and allow it to drain at least 30 minutes.
6. Serve topped with 2 tablespoons yogurt and 1 tablespoon of granola.
7. Enjoy!
