This is a fun recipe to make when children learn about the Grain Group! Invite the school foodservice manager to work with the children, or arrange for them to help you assemble ingredients and cook it the school's oven.
4 1/2 cups old-fashioned oats, uncooked
1/3 cup sliced almonds
2 teaspoons cinnamon
1/2 teaspoon salt (optional)
1/4 cup maple syrup
1/4 cup apple juice
1 tablespoon vegetable oil
1/2 cup raisins
1. Preheat oven 350 degrees F.
2. Wash hands.
3. Stir together oatmeal, almonds, cinnamon and salt in a large bowl.
4. In a separate bowl, whisk maple syrup, apple juice and vegetable oil. Pour over oatmeal mixture and stir to coat thoroughly.
5. Spread mixture in an even layer onto a 15x12-inch baking pan. Bake for 25 minutes, stirring twice during baking time.
6. Cool mixture in the pan before adding raisins. Store granola in an airtight container.
7. Serve with lowfat or fat-free milk or yogurt. Or for classroom tasting, serve a 2-tablespoon "tasting serving" with a dollop of vanilla or fruit-flavored, low-fat yogurt.
Makes 4 1/2 cups (9 half-cup servings or 18 2-tablespoon "tasting servings")
