Pot O’ Gold Potatoes

Turn an ordinary baked potato into a nutrient-packed pot o’ gold this St. Paddy’s Day. For a rainbow of colors and a nutrient boost, add colorful steamed veggies.

Ingredients:

2 medium potatoes, baked
1/2 cup grated cheddar cheese
1/2 cup low-fat milk
Salt and pepper to taste
Vegetable oil
Optional: Bite-sized pieces of steamed broccoli florets, carrots, zucchini or peppers

Directions:

1. Wash hands.

2. Preheat oven to 425 degrees F.

3. Scrub potatoes. Dry with a clean dishtowel or a paper towel. Rub the outside of each potato with a little oil. Pierce the skin several places with a fork

4. Bake potatoes 45 minutes to 1 hour until the potato is soft. Cut each potato in half. Scoop the insides into a bowl.

5. Add milk and 1/4 cup cheese. Mash well with a fork. Season to taste.

6. Spoon the mixture back into each potato skin, dividing it evenly between the four halves. Sprinkle the remaining cheese on each half.

7. Warm for 1 to 2 minutes on high in the microwave.

8. Optional: Top with veggies if desired.
